Bake! – Cream Cheese Scones

The 10th recipe I made from Nick Malgieri’s “Bake!” was Cream Cheese Scones. Wow, these were really quick to put together. Only problem – I didn’t have cream cheese, but I DID have cottage cheese and thought I’d give it a try. Worked out perfect ;-). These scones were heavy, but so delicious! We served them with homemade jam – YUM! Others who made these scones: Abby and Phyl.


The Modern Baker Challenge: Quick Breads – Ginger Scones with Almond Topping

I made the ginger scones for the Modern Baker Challenge quite a while ago, but didn’t get to post about them. I have NO idea where my pictures of the ginger scones are – I know I took one or two pictures, but they are nowhere to be found. This is not a tragedy, though, because they were not a big hit here. I did make my own crystallized ginger following a recipe by David Lebovitz. It took FOREVER to dry – like 3 days, or so. The scones weren’t difficult to make, but the result was disappointing. They were dry, the ginger was almost not noticeable, the almond topping fell off…. This is not a recipe I’ll make again.

The Modern Baker Challenge: Quick Breads – Butterscotch Scones

Butterscotch  Scones. The next recipe on the Modern Baker Challenge line-up was calling my name. I LOVE butterscotch! If I had to name one thing from the U.S. that I miss here (ok, 2 things) it would be butterscotch chips and Strawberry ‘n’ Cream Quaker Oatmeal. I KNOW – both these things are super artificial, but when I spent a year in the U.S. I wasn’t on the “everything has to be made from scratch” trip yet. Oh, there is a third thing: Kraft Mac ‘n’ Cheese White Cheddar. YUM. OK, I’m going to run and hide now before you come and beat me ;o). In my defense I have to say that was ELEVEN years ago.
